Chana Dal - 1/4 Cup
Masoor Dal - 1/4 Cup
Toor Dal - 3/4 Cup
Salt - 1 1/2 Tsp
Turmeric Powder - 1/2 Tsp
Water
Ghee - 2 Tbsp (for Tadka)
Cumin Seeds - 1 Tsp
Green Chilli - 2 Nos
Garlic - 1 Tbsp
Ginger - 1 Tbsp
Onion - 2 Nos
Tomato - 2 Nos
Salt - 1 Tsp (for Tadka)
Turmeric Powder - 1/2 Tsp (for Tadka)
Kashmiri Chilli Powder - 2 Tsp
Coriander Powder - 2 Tsp
Water - 1/4 Cup (for Tadka)
Garam Masala Powder - 1 Tsp
Kasuri Methi Leaves
Ghee - 3 Tbsp (for assembling)

Wash and soak the dals separately in water for 1 hour.

Soak the Basmati rice in water separately for 30 mins.

Take a pressure cooker, add ghee and bay leaf. Add all the soaked dals/lentils one by one and add salt, turmeric powder.

Mix well, add water and pressure cook for 4-5 whistles on a medium flame. Keep aside.

Take a pot full of water. Boil it and add the soaked rice. Add some salt.

Cook the rice fully on high flame for 5 mins and then strain it. Keep the rice aside.

Take ghee in a wide pan, add cumin seeds, green chillies and red chillies.

After they are sautéed, add chopped ginger, garlic, onions and sauté until they are golden brown in colour.

Then add finely chopped tomatoes and cook for 2-3 mins.

Next add salt, turmeric powder, Kashmiri red chilli powder, coriander powder. Mix well and add water. Cook until the tomatoes are mushy for about 5 mins.

Then add garam masala powder and kasuri methi. Mix well and turn off the stove.

Take a deep pot, add the onion tomato tadka, cooked dal and mix well. Cook for 5 mins on medium flame.

Add chopped coriander leaves, chopped green chillies and ghee. Mix well.

Check for seasoning and add salt if required.

Transfer the rice into the dal mixture and mix well. Let it cook for 2-3 minutes on low flame.

Turn off the stove and keep the khichdi aside.

For the Tadka, take ghee in a pan. Add red chillies, cumin seeds, hing, fried onions, chopped coriander leaves and Kashmiri red chilli powder.

Once done, transfer the tadka to the Khichdi and serve the restaurant dal khichdi hot.
