Turmeric is a key ingredient and cannot be replaced.

1

Soak 1/2 cup of split green moong dal and 1/2 cup of basmati rice together in water for about 1 hour.

2

Transfer the soaked dal and rice to a pressure cooker.

3

Pour enough water into the cooker so that the rice and dal are completely immersed.

4

Add 1/2 teaspoon of turmeric powder and 1 teaspoon of salt to the cooker.

5

Add 1 teaspoon of ghee to the mixture and gently mix it.

6

Close the pressure cooker and place the weight on it.

7

Cook on medium flame for about four whistles.

8

Once the pressure is released, open the pressure cooker and check the rice and dal for doneness.

9

For tempering, heat 1 tablespoon of ghee in a kadhai.

10

Add 1 teaspoon of cumin seeds to the melted ghee and roast it slightly.

11

Add finely chopped ginger and 2 finely chopped green chilies to the kadhai and mix quickly.

12

Add the cooked rice and dal from the pressure cooker to the kadhai and gently mix everything together.

13

If the khichdi is too thick, add a little bit of hot water to achieve the desired gooey consistency.

14

Check for seasoning and add more salt if necessary.

15

Finish by adding freshly chopped coriander leaves to the khichdi.
