Khichdi is a traditional Indian dish made with rice and lentils, often considered comfort food and is commonly served during festivals and special occasions.

Ingredients

  • 1 cup moong dal (split yellow lentils)
  • 1/2 cup basmati rice
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 1 green chili, slit
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 2 tbsp ghee or oil
  • 4 cups water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. 1Rinse the moong dal and basmati rice together under running water until the water runs clear. Drain and set aside.
  2. 2In a large pot or pressure cooker, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.
  3. 3Add chopped onions and sauté until they turn translucent.
  4. 4Stir in the ginger-garlic paste and green chili, and sauté for another minute until fragrant.
  5. 5Add the chopped tomatoes and cook until they soften.
  6. 6Add turmeric powder and salt, and mix well.
  7. 7Add the rinsed moong dal and rice to the pot, stirring to combine with the spices.
  8. 8Pour in the water and bring to a boil. If using a pressure cooker, cover and cook for 3-4 whistles. If using a pot, cover and simmer for about 20-25 minutes until the dal and rice are cooked and soft.
  9. 9Once cooked, stir well to combine. Adjust the consistency by adding more water if needed.
  10. 10Garnish with fresh coriander leaves before serving.

  11. 11Garnish with fresh coriander leaves and serve hot with yogurt or pickle.
