2 ways simple & healthy khichdi recipe - moong dal khichdi & mix veg masala khichdi restaurant style

Khichdi is a traditional Indian dish made with rice and lentils, often considered comfort food and is commonly served during festivals and special occasions.
Ingredients
- ●1 cup moong dal (split yellow lentils)
- ●1/2 cup basmati rice
- ●1 medium onion, chopped
- ●1 medium tomato, chopped
- ●1 green chili, slit
- ●1 tsp ginger-garlic paste
- ●1/2 tsp turmeric powder
- ●1 tsp cumin seeds
- ●2 tbsp ghee or oil
- ●4 cups water
- ●Salt to taste
- ●Fresh coriander leaves for garnish
Instructions
- 1Rinse the moong dal and basmati rice together under running water until the water runs clear. Drain and set aside.
- 2In a large pot or pressure cooker, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.
- 3Add chopped onions and sauté until they turn translucent.
- 4Stir in the ginger-garlic paste and green chili, and sauté for another minute until fragrant.
- 5Add the chopped tomatoes and cook until they soften.
- 6Add turmeric powder and salt, and mix well.
- 7Add the rinsed moong dal and rice to the pot, stirring to combine with the spices.
- 8Pour in the water and bring to a boil. If using a pressure cooker, cover and cook for 3-4 whistles. If using a pot, cover and simmer for about 20-25 minutes until the dal and rice are cooked and soft.
- 9Once cooked, stir well to combine. Adjust the consistency by adding more water if needed.
- 10Garnish with fresh coriander leaves before serving.

- 3Add chopped onions and sauté until they turn golden brown.
- 4Stir in the ginger-garlic paste and green chilies, cooking for another minute until fragrant.
- 5Add chopped tomatoes and cook until they soften and the oil starts to separate.
- 6Mix in the turmeric powder, salt, and garam masala, stirring well to combine.
- 7Add the mixed vegetables and sauté for 2-3 minutes until they are slightly tender.
- 8Add the soaked rice and dal to the pot, stirring to mix everything together.
- 9Pour in 4 cups of water and bring to a boil. If using a pressure cooker, cover and cook for 2 whistles. If using a pot, cover and simmer for about 20-25 minutes until the rice and dal are cooked and the water is absorbed.
- 10Once cooked, fluff the khichdi with a fork and let it sit for a few minutes before serving.
- 11Garnish with fresh coriander leaves and serve hot with yogurt or pickle.
