Roast garlic by using two methods: 1) Place peeled garlic cloves in a pan, cover with olive oil and sprinkle salt. 2) Cut tops off 3 heads of garlic, drizzle with olive oil, sprinkle salt, cover with aluminum foil, and roast at 350°F for 40-45 minutes.

Check the garlic in the pan after 40 minutes; remove when golden brown and soft.

For garlic in foil, uncover and roast for an additional 15-20 minutes until golden and soft.

Squeeze roasted garlic cloves into a bowl, removing any peels.

Blend roasted garlic with leftover oil from roasting, and optionally add fresh grated garlic for sharpness.

Add 4 oz softened butter, a pinch of salt, a heaping teaspoon of dried oregano, and chopped parsley to the garlic mixture and mash together.

Cut a 1 pound loaf of bread in half lengthwise and place on a parchment-lined baking tray.

Spread the garlic butter mixture evenly on both halves of the bread, pressing it into any nooks.

Sprinkle grated Parmesan cheese on top of the bread.

Bake in a preheated oven at 350°F for about 15 minutes, optionally broiling for the last minute or two for color.
