1 cup flour
1 teaspoon vanilla essence
1/2 cup full cream milk
1 large egg
1 tablespoon vinegar
3/4 cup fresh cream

Cream the margarine and sugar together until combined.

Add the egg and mix well.

Add one tablespoon of apricot jam and whisk more.

In a glass, combine the milk and bicarbonate of soda and mix well.

Add sifted flour to the wet ingredients, alternating with the milk until both are added.

Add the vinegar to the mixture.

Pour the batter into an oven-safe dish and bake in a preheated oven at 180 degrees Celsius for one hour.

Prepare the sauce by simmering 125 grams of margarine, 65 ml of water, and 3/4 cup of sugar in a saucepan on medium heat for about 2 minutes while stirring continuously.

Remove the pan from heat and add cream and vanilla to the sauce.

Poke holes in the pudding with a kebab stick and pour the sauce over it while still hot.

Allow the sauce to soak in for about an hour or overnight.
