1/2 cup apricot jam
1 tablespoon balsamic vinegar
1 cup milk
1/2 cup melted butter
1 cup flour
1 teaspoon baking soda

Add the eggs and sugar to your stand mixer and whisk until super fluffy (almost white).

Add in the apricot jam, balsamic vinegar, milk, and melted butter and whisk until fully incorporated.

Mix all the remaining dry ingredients together and add them to the mixture.

Whisk until barely homogeneous and do not overmix.

Pour the batter into an 8-inch squared mold (buttered and lined).

Bake in the oven for 30-35 minutes at 350°F.

Meanwhile, put all the ingredients of the sauce in a saucepan.

When the butter has melted, bring to a simmer.

Immediately out of the oven, poke holes all over your pudding.

Pour your hot sauce all over it.

Let it rest for 30 minutes so the pudding absorbs all the liquid.
