Servings4
150 grams sugar
1 tablespoon warm butter
2 eggs
80 milliliters water
milk
apricot jam
flour
baking soda
vinegar
pinch of salt
heavy cream
vanilla essence
1

In a bowl, combine 1 tablespoon of warm butter, 150 grams of sugar, and 2 fresh eggs to create a homogeneous golden batter.

2

Add apricot jam, vinegar, and milk to the batter and mix well. Note that vinegar helps achieve a soft and spongy texture by reacting with baking soda.

3

Sift in flour and baking soda into the batter, then mix until combined.

4

Add a pinch of salt and whisk the batter one final time before transferring it to a greased oven-safe form.

5

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

6

Transfer the batter into an 8x8 inch (20 by 20 cm) form, ensuring the batter is evenly distributed.

7

Bake in the preheated oven for 30 to 40 minutes, checking for doneness by inserting a toothpick into the center of the cake.

8

While the cake is baking, prepare the sauce by boiling 80 milliliters of water in a saucepan.

9

Add butter and the remaining sugar to the boiling water, stirring until the butter is almost melted and the sugar is dissolved.

10

Pour in heavy cream and 1 to 2 teaspoons of vanilla essence, stirring constantly until it reaches a slight boil, then remove from heat and cover.

11

Once the cake is done, pour the warm sauce over the hot cake, allowing it to absorb the sauce.
