Malva pudding

375g Castor Sugar
6 Tbsp Apricot Jam
620g Cake Flour
1 pinch Salt
2 tsp Baking Soda
1 cup Milk
60g Butter; melted
250g Butter
500 mℓ Cream
320 mℓ Water; hot
320g White Sugar

Preheat the oven to 180°C/ 356°F.

In a large bowl, beat together the eggs and castor sugar until light and fluffy.

Add in the apricot jam and beat well to incorporate.

In a separate bowl sift together the cake flour, salt, and baking soda.

In another bowl combine the milk, melted butter and vinegar.

Add in the wet and dry ingredients to the egg and sugar mixture, alternating between the two and beating between each alternation.

Add the batter to a greased baking dish and bake for 40-45 minutes at 180°C/ 356°F.

In a pot, add in the butter, cream, water, and white sugar. Allow everything to melt together.

When the pudding is done baking, prick many small holes into it with a fork.

Pour all the sauce over the cake.
