Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).

In a bowl, mix together 1 cup full fat milk, 1 cup brown sugar, 2 eggs, 1/2 cup apricot jam, 1/4 cup melted butter, and 1 tablespoon vinegar until smooth.

In another bowl, combine 1 cup flour, 1/2 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon baking soda.
