Shred 8 ounces of block extra sharp cheddar cheese using a food processor.

Add 1 and 1/3 cups all-purpose flour, 1 and 1/2 teaspoons granulated sugar, 1/4 teaspoon kosher salt, and 1/4 teaspoon paprika to the food processor and process for 15 seconds.

Chop 1/2 cup cold unsalted butter into pieces and scatter over the mixture.

Pulse until the butter is mostly cut into the mixture, leaving some chunks.

Add 2 tablespoons of ice water and pulse 5 to 10 times, then add 1 more tablespoon if needed until the dough clings together.
