Nutritional yeast provides a cheesy flavor with fewer calories.

Oat flour is less expensive and gluten-free.
Preheat the oven to 225ยฐ F (107ยฐ C).
Add 1 cup (225 g) of Kemp's full fat cottage cheese to the food processor.
Grate fresh Parmesan cheese and add 1/2 cup (25 g) to the food processor.
Process the mixture for about 20 seconds.
Scrape down the sides of the food processor to get any chunks of cottage cheese, then process for another 20 seconds or until the mixture looks like frosting.
Use a number 100 disher (2 teaspoons) to scoop the mixture, filling it just a smidge over.
Place the scoops onto a silicone mat, aiming for 24 consistent crackers.
Bake in the preheated oven for 40 minutes.
After 40 minutes, rotate the tray 90ยฐ to ensure even baking.
Continue baking for another 30 minutes until the edges are just starting to turn golden brown.
Turn off the oven and let the crackers cook with the residual heat for another 30 minutes.
Check the crackers; they should be nice and golden brown.
