Nutritional yeast provides a cheesy flavor with fewer calories.

Oat flour is less expensive and gluten-free.
In a bowl, combine 3/4 cup all-purpose flour, 1 teaspoon coarse pepper, and 1 teaspoon chopped fresh rosemary leaves.
Add 4 tablespoons of softened unsalted butter cut into cubes.
Work the butter into the flour mixture until it looks like crumbs.
Add 1 cup of grated Parmesan cheese and 1/4 cup of heavy cream to the bowl.
Mix until a dough forms; if the dough is too dry, add more cream a little at a time.
Form the dough into a roll and wrap it in plastic wrap.
Refrigerate the dough for a minimum of 3 hours or up to 2 days.
Slice the chilled dough into about 1/8 inch thick slices.
Preheat the oven to 325ยฐF (162ยฐC).
Place the slices on a baking sheet and bake for about 20 minutes until browned.
Let them cool on the cookie sheet for a few minutes before transferring to a cooling rack.
