Start by boiling the beef with 1 tablespoon ginger-garlic paste, 1 tablespoon turmeric, and some salt for 30 minutes until tender.
Chop 2 tomatoes and set aside.
Finely chop the onion and set aside.
Cut the eggplant into pieces and soak in salted water to prevent browning.
Heat 2 tablespoons of oil in a pan until hot.
Add 2 bay leaves and cinnamon pieces, frying for 2 minutes until fragrant.
Add the chopped onion and fry until golden brown, about 3-4 minutes.
Add the eggplant to the pan and fry for 6-7 minutes without adding water.
Add salt to taste and mix well with the eggplant.
Once the eggplant changes color, add the chopped tomatoes and continue frying until they soften.
Add 1 tablespoon red chili powder and mix well with the eggplant and tomatoes.
Add the boiled beef to the mixture and stir for 3-4 minutes to combine.
Add the tamarind and mix thoroughly.
Pour in 2 glasses of water and stir well.
Cover the pan and cook on medium heat for 4-5 minutes until the water reduces.
Check the consistency and let it dry until the oil separates on top.
Add dried mint and garam masala powder, mixing well.
Lower the heat and cook for an additional 5 minutes before serving.
