Cultural Context

Originating from Paraguay, Sopa Paraguaya is a traditional cornbread that reflects the country's indigenous and colonial culinary influences. This dish is often served at gatherings and celebrations, symbolizing hospitality and community. Today, variations exist across South America, with many enjoying it as a comforting side dish or snack.

1 teaspoon salt
1 cup milk
1 teaspoon corn flour
1 teaspoon oil
1 onion
fresh corn kernels
1

Chop 1 onion finely.

2

In a bowl, add 1 cup of milk.

3

Add 1 teaspoon of corn flour to the milk and mix well.

4

Add 1 teaspoon of salt to the mixture.

5

Crush fresh corn kernels and add them to the bowl.

6

Mix all the ingredients thoroughly.

7

In a frying pan, heat some oil (olive oil or any preferred oil).

8

Add the chopped onion to the pan and sauté until light brown.

9

Once the onion is browned, turn off the heat.

10

Add the mixture from the bowl into the frying pan with the sautéed onion and mix well.

If the mixture is too thick, add a little more milk to achieve a spongy consistency.

12

Transfer the mixture to a pot if you don’t have an oven, cover it, and cook on low flame for 20 minutes.

13

After 20 minutes, check the dish; it should have a nice aroma and be well-cooked.

14

Carefully remove the dish from the pot and place it on a plate.
