Originating from Paraguay, Sopa Paraguaya is a traditional cornbread that reflects the country's indigenous and colonial culinary influences. This dish is often served at gatherings and celebrations, symbolizing hospitality and community. Today, variations exist across South America, with many enjoying it as a comforting side dish or snack.
Separate the yolks from the whites of 3 eggs, placing the yolks in one bowl and the whites in another.
Whisk the egg whites in a stand mixer until they become fluffy and white, resembling a cloud-like consistency.
Chop 2 cups of onions, either by grating or cutting with a knife.
In a frying pan on medium heat, add a little oil and fry the chopped onions, sprinkling with salt, until they become translucent.
In a separate bowl, combine 2 cups of milk and 3/4 cup of vegetable oil.
Add 2 cups of mozzarella cheese to the mixture.
Incorporate 1 cup of cornmeal into the bowl.
Add 1 cup and 1/3 cup of corn masa (or substitute with 1 cup all-purpose flour and 2/3 cup cornmeal) into the mixture.
Mix in 1 and 1/2 teaspoons of salt.
Add the egg yolks to the mixture and then gently fold in the fluffy egg whites.
Prepare an 8 by 8 inch baking pan by buttering or spraying it with cooking spray.
Pour the mixture into the prepared baking pan.
Bake in the oven at 350 degrees Fahrenheit for 45 to 60 minutes.
Remove from the oven and check for doneness.
