500 g boneless lamb
1 can baked beans
1 large onion, chopped
1 sweet potato, chopped into rough chunks
1 carrot, chopped into chunks
cooking oil
2 vegetable stock cubes
300 ml boiling water
1 tbsp plain flour
2 tsp Worcestershire sauce
3 large potatoes, sliced
green and yellow peppers, chopped into chunks
1 tsp red chili powder
salt to taste
1 tsp black pepper
a couple of bay leaves

Spray cooking oil into the pot.

Add chopped onions and cook on medium heat until soft, about 1 minute.

Add lamb and bay leaves to the pot, stir, and cook for about 4-5 minutes.

Add spices (red chili powder, salt, black pepper) to the pot and cover for about 2 minutes.

Add Worcestershire sauce and plain flour to the pot and mix well.

Pour in the vegetable stock made from 2 stock cubes and 300 ml boiling water.

Add chopped peppers, carrots, and sweet potatoes to the pot and stir.

Taste and adjust salt or chili if needed.

Transfer the mixture to a baking dish and arrange sliced potatoes on top.

Preheat oven to gas mark 4 (180°C).

Cover the dish with foil and bake for 20-25 minutes.

Remove foil and grill for 5-10 minutes until potatoes are brown and crispy.
