In India, turkey is less common than chicken, but its popularity is growing, especially in urban areas, where people seek healthier alternatives to red meat.

Pour 1.89 L of diet cranberry juice into a pot and heat until boiling.
Add 1/2 cup of salt, 2 red chilies, 4-5 slices of lime, 4 pieces of cinnamon bark, 5 green cardamoms, 1 teaspoon of black peppercorns, and 1 tablespoon of cloves to the boiling cranberry juice.
Allow the mixture to steep for 15-20 minutes, then cool completely.
Place the defrosted turkey in a container and pour the cooled cranberry brine over it, topping it off with another bottle of diet cranberry juice to cover the bird.
Cover the container and refrigerate overnight.
Remove the turkey from the brine and drain it completely, discarding the brining liquid.
In a bowl, mix 1 tablespoon each of red chili powder, cumin powder, and coriander powder, along with 1/2 tablespoon of turmeric, 2 tablespoons of ginger and garlic paste, and salt to taste.
Spread some of the marinade on the bottom of the turkey, then flip it over and coat the rest of the turkey with the marinade.
Add 1 cup of sliced onion, 1 red chili, a couple of slices of ginger, and 2-3 mushrooms to the roasting pan with the turkey.
Cover and place in a preheated oven at 350°F for about 2 hours.
After 2 hours, remove the lid and baste the turkey with the juices, then continue roasting uncovered for another hour, basting regularly.
In a separate pot, heat oil and add 1 tablespoon each of sliced green and red chilies, followed by 2 tablespoons of ginger and garlic paste, sautéing until fragrant.
Add 1 tablespoon of chili powder and 1/2 tablespoon of cumin powder, then add salt to taste.
Add 1/2 cup of Ocean Spray cranberries and mix well, then set aside.
In a hot wok, add oil and 1 cup of sliced onion, allowing it to sweat.
Add 1/2 cup of crushed garlic and let it sweat without burning.
Add 3 cups of day-old basmati rice and season with 2 tablespoons of light soy sauce, mixing well.
