1/2 teaspoon salt
2 tomatoes
2 medium sized onions
4 cloves garlic
1 to 2 inch piece ginger
1 tablespoon whole coriander seeds (coarsely ground)
3 bay leaves
2 black cardamoms
8 to 10 cloves
1 to 2 inch piece cinnamon
1 teaspoon whole black peppers
1 teaspoon caraway seeds
3 whole red chili peppers
3 green cardamoms
1 cup water
fresh green coriander for garnish

Chop the tomatoes, slice the onions, and garlic, and chop the ginger into small pieces.

Place a pot on medium high heat and add the oil.

When the oil is hot, add the onions and cook until softened, about 3 minutes.

Add all the whole spices and red chilies, then add the beef.

Mix the beef with the rest of the ingredients.

Add the chopped ginger, sliced garlic, chopped tomatoes, salt, and yogurt (stir yogurt before adding to prevent curdling).

Mix all ingredients together and let them cook on medium high heat without adding water, covering the pot for about 30 minutes, stirring periodically to prevent sticking.

After 30 minutes, add 1 cup of water and cover the pot again, cooking for another 30 minutes.

After 30 minutes, let it simmer until most of the moisture is gone and it has released some oil, which takes about 5 more minutes.

Before serving, add chopped fresh coriander and ginger.
