Wash the beef, cow leg, and Pomo thoroughly with salt.
Add salt, diced onion, diced garlic, ginger powder, curry, seasoning cube, oregano, thyme, and bay leaf to the meat.
Add water to the meat and bring to a boil, stirring occasionally until done.
Remove the tender beef and continue cooking the tougher cow leg and cow skin for an additional 15-20 minutes.
In a separate pot, heat vegetable oil and fry sliced onion for about 2 minutes.
Add blended bell pepper, tomatoes, onion, and habanero pepper to the oil and cook.
Add the cow legs to the pepper mix and boil together for about 35 minutes, stirring occasionally.
Add meat stock, seasoning cube, salt, and rosemary to the mixture and cook for another 10-15 minutes.
Add all the boiled meat to the pot, stir well, and simmer for about 5 minutes.
Prepare the egusi by blending melon with onion and water until smooth, then set aside.
In another pot, heat palm oil and add blended egusi and diced onion, cooking for 25 minutes without stirring.
Combine the egusi with the sauce and cook for an additional 10 minutes, adjusting seasoning as necessary.
Prepare the vegetable soup by boiling assorted meat with diced onion, salt, curry, thyme, oregano, and seasoning cube until tender.
