Peel and grate 2 to 3 medium potatoes, 2 carrots, and 1 medium onion.

Sprinkle salt on the grated veggies and let them rest for 5 minutes to extract liquids.

Squeeze out as much liquid as possible using a cheesecloth or clean kitchen towel.

Transfer the veggies to a bowl and add 1/2 teaspoon of baking powder, 1/4 cup of breadcrumbs, 1 teaspoon of chicken consommé powder, and a handful of chopped parsley.

Add 3 eggs, mixing each one until fully incorporated. Check for consistency and add another egg if needed.

Heat about 1/2 inch of canola oil in a wide frying pan on medium high.

Scoop a spoonful of the mixture and add to the pan, avoiding overcrowding.
