Rinse sorrel leaves with cold or room temperature water several times until clean.

Drain the sorrel leaves.

In a large pot, add water, grated or crushed ginger, star anise, cinnamon, allspice, whole cloves, and orange peel.

Bring the mixture to a boil to allow the flavors to mesh together.

Once boiling, add the drained sorrel leaves and push them down into the liquid with a spoon.

Let the mixture simmer for about 1-2 minutes, then turn off the heat and let it steep overnight.

The next day, strain the mixture using cheesecloth or a very fine sieve to ensure all spices and ginger are removed.
