List the ingredients: 2 tablespoons of pimento seeds, sugar to taste (brown sugar or granulated sugar or honey), 0.5 pound of ginger (scraped, washed, and crushed), 2 pounds of sorrel (washed and cleaned), and optional red label wine.

Place water in a pot to boil.

Once the water is boiling, add the 2 pounds of sorrel to the pot.

Add 2 tablespoons of pimento seeds to the boiling water.

Add the crushed ginger to the pot and stir the ingredients together.

Boil the mixture for about 15 to 20 minutes until the color deepens.

Turn off the heat and let the mixture cool.

Strain the mixture to remove the solid parts, resulting in a rich sorrel liquid.

Optionally, add red label wine to some of the strained mixture for a spiked version.

Sweeten the drink by adding 4 spoons of sugar, taste, and then add another 3 spoons if necessary, adjusting to personal taste.
