Remove the seeds from the sorrel by cutting the top off with a knife.

Wash the sorrel flowers with plenty of water to remove any dirt and set aside.

Cut a piece of ginger about 1” to 2” and peel it.

In a large pot, place the sorrel, ginger, and approximately 8 cups of water, ensuring it is completely covered. Place over medium heat until the water boils. Let it simmer for 15 minutes.

Turn off the stove and let it cool a bit, then strain the liquid for about 10 minutes using a strainer in a large bowl. Repeat until all liquid is strained.

To sweeten, start adding water to lighten the liquid, beginning with 1 cup, and taste. Adjust with more water as needed, using up to 2.5 cups total. Sweeten to taste, aiming for a balance that is sweet but not syrupy, using between 1 to 2 cups of sugar.

Refrigerate until cold. Serve and enjoy!
