Add 2 teaspoons wood pressed grounded oil to a kadai.

Once the oil is heated, add 3-4 sliced garlic cloves and stir until light golden brown.

Add 1 chopped onion and sauté until it turns transparent.

Stir in 1 teaspoon sea salt and 2 tablespoons chopped coriander stalks.

Add 1/4 teaspoon turmeric powder and stir well.

Slice 4 medium sized carrots and add them to the kadai; stir and sauté for 2-3 minutes on low flame.

After 3 minutes, add 3 cups of water and stir; turn the flame on high and bring to a boil.

Cover and cook on low flame for 15 minutes.

After 15 minutes, open the lid and stir; the carrots should be nicely cooked.

Turn off the flame and blend the soup using a stick blender until smooth.

If a thinner consistency is desired, add an extra 1/2 cup of water and stir.

Add 1/2 teaspoon black pepper powder and some coriander leaves; reduce the flame to the lowest and stir well.

Turn off the flame and squeeze in the juice of 1/2 lemon; stir again.

Garnish with a sprinkle of black pepper powder and coriander leaves before serving.
