2 lbs beef chuck roast
1 onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 can (28 oz) crushed tomatoes
1 cup beef broth
1/2 cup red wine
2 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
2 tbsp olive oil
Fresh parsley, for garnish
Grated Parmesan cheese, for serving

Heat olive oil in a skillet over medium-high heat.

Season the beef chuck roast with salt and pepper, then sear it in the skillet until browned on all sides. Remove and set aside.

In the same skillet, add chopped onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.

Add the tomato paste, oregano, basil, and red pepper flakes (if using) to the vegetables and cook for another minute.
