Shrimp & Snow Pea Stir Fry

1 Tbsp toasted sesame oil
1 lb large shrimp, peeled and deveined
2 Tbsp ginger paste or grated fresh ginger
4 garlic cloves, finely chopped
3 Tbsp soy sauce
3 Tbsp hoisin sauce
8 oz snow peas, trimmed
Sesame seeds, for serving (optional)
Thinly sliced scallion, for serving (optional)

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.

Remove the shrimp from the skillet and set aside.

In the same skillet, add the snow peas and bell pepper, stir-fry for 2-3 minutes until they are tender-crisp.

Return the shrimp to the skillet with the vegetables.

Add soy sauce, oyster sauce, sesame oil, black pepper, and red pepper flakes (if using). Stir well to combine.

Cook for an additional 1-2 minutes until everything is heated through.

Serve hot over rice or noodles.
