Servings4
1 tablespoon vegetable oil
500 g chicken mince
1 minced garlic
1 finely chopped onion
1 finely diced carrot
1 finely diced red capsicum
mushrooms (quantity not specified)
optional zucchini (quantity not specified)
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
0.5 teaspoon sugar
1 tablespoon water
thinly sliced spring onions (quantity not specified)
chopped peanuts (quantity not specified)
fresh lime juice (quantity not specified)
iceberg lettuce (quantity not specified)
1

Peel off iceberg lettuce leaves to create cups and wash them.

2

Place lettuce cups in the fridge to keep them crisp.

3

Heat 1 tablespoon of vegetable oil in a large pan or wok.

4

Add minced garlic and finely chopped onion to the pan and sauté for about 1 minute until fragrant.

5

Add 500 g of chicken mince to the pan, breaking it up with a spoon and cooking until browned.

6

Add finely diced carrot, red capsicum, and mushrooms to the pan. Optionally add chopped zucchini.

7

Stir fry the mixture for about 3 to 4 minutes until vegetables soften but still have some bite.

8

In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of hoisin sauce, 1 teaspoon of sesame oil, 0.5 teaspoon of sugar, and 1 tablespoon of water. Whisk to combine.

9

Pour the sauce over the filling in the pan and stir to combine. Let it simmer for 2 to 3 minutes until the sauce thickens slightly.

10

Take the chilled lettuce cups out of the fridge and spoon the hot filling into each leaf.

11

Sprinkle thinly sliced spring onions and chopped peanuts on top, and add a squeeze of fresh lime juice.
