Pork tenderloin is leaner, while chicken thighs are more economical.

Prepare the ribbe 1-2 days before.

Sprinkle with salt and pepper (both front and back).

Cover the ribbe with plastic and refrigerate.

Take out the ribbe from the refrigerator after 1-2 days.

Place the ribbe in a pan with an elevation in the middle.

Or you can use a plate or crumpled aluminum foil in the middle of the ribbe.

Place it upside down under the ribs, so that it is a little higher in the middle (then the melted fat runs away).

Pour 2-3 dl water into the pan and cover with aluminum foil.

Steam the ribs for approximately 30 minutes at 230 degrees Celsius.

Remove the foil, lower the heat to 200 degrees and roast for approximately 90 minutes.

Always make sure that there is water in the pan.

After 90 minutes, check if the rind is crispy. If it isn’t, move the ribs to the top of the oven and increase the heat. Watch very carefully to avoid burning the rind! Cover finished areas with aluminum foil.

Serve it with mashed potatoes, brussel sprouts, sauerkraut made from red cabbage, and lingonberry jam.
