Cut beef into cubes and season with salt and pepper.
Heat butter in a large pot over medium heat until melted.
Add beef cubes to the pot and brown on all sides, about 5-7 minutes.
Remove browned beef and set aside.
In the same pot, add chopped onions, leeks, and celery; sauté until softened, about 4-5 minutes.
Return the beef to the pot and add chopped carrots, turnips, and potatoes.
Pour in beef broth and enough water to cover the ingredients.
Add bay leaves and thyme, then bring to a boil.
Reduce heat to low and cover; simmer for 1.5-2 hours until beef is tender.
Stir in peas and corn, cooking for an additional 10 minutes.
Adjust seasoning with salt and pepper to taste.
Remove bay leaves before serving.
Garnish with chopped parsley before serving.
