Originating from the Indian subcontinent, samosas have been embraced in Kenya, where they are a popular street food. Traditionally filled with spiced meat or vegetables, they are often enjoyed during celebrations and gatherings. Today, Kenyan samosas have gained international popularity, with variations including different fillings and cooking methods, showcasing the country's diverse culinary influences.

Mix 3 cups of plain flour with 1 teaspoon of salt in a bowl.
Add 1-2 teaspoons of olive oil and 1 cup of water gradually, mixing until it comes away from the sides of the bowl.
Knead the dough for about 5 minutes, then cover with cling wrap and let it rest for 30 minutes.
In a heated fry pan, add 500g of ground beef and cook, breaking it up as it cooks.
Add 1 teaspoon of whole seeds, 2 teaspoons of ground coriander powder, and a bit of salt, stirring it in.
Add 1 chopped red onion, 2 grated cloves of garlic, and 2 sliced stalks of spring onion to the pan.
Add 2 chopped Kenyan green chilies (optional) and sauté for a minute.
Turn off the heat and mix in a handful of chopped coriander and the juice of 1 lime.
Let the filling cool down.
Roll the rested dough into a log and cut it into smaller pieces to form balls.
Roll each ball into a circle and preheat each wrapper in a fry pan for a few seconds on each side.
Cut the wrapper in half, fold it over, and seal the edge with a flour-water paste.
Fill the cone with the beef filling and seal the top with the paste.
Heat vegetable oil in a pan and fry the samosas in batches until golden brown.
Serve with lime wedges.
