Rack of Lamb with Chimichurri Sauce

Preheat the oven to 450°F (232°C).
Season both sides of the frenched racks of lamb with salt and black pepper.
In a food processor, combine 10-12 cloves of garlic, 2 teaspoons of rosemary, 1 cup of fresh parsley, red pepper flakes to taste, and 1/2 cup of extra virgin olive oil.
Blend the marinade until well chopped.
Cover the racks of lamb with the marinade and let sit for a few minutes (optional).
Place the marinated lamb in the oven on the top rack for 15 minutes.
After 15 minutes, carefully turn the lamb over and roast for an additional 5 minutes.
Remove the lamb from the oven and discard any excess fat.
Tent the lamb loosely with foil and let it rest for 10 minutes before carving.
Carve the rack of lamb between the bones to serve.
