1

Rinse the artichoke and trim it down, leaving about an inch on the stem before discarding the rest.

2

Pinch off or trim the upper leaves of the artichoke with a paring knife to create a flat base.

3

Cut a thick slice (about 1.5 inches) from the onion to use as a platform in the pot.

4

Peel the skin off the onion after cutting.

5

Place the onion in the bottom of the pot with the tapered side down.

6

Cut a couple of quarter-inch thick rings from the lemon and place them in the pot around the onion.

7

Add a bay leaf next to the onion in the pot.

8

Smash the garlic cloves and place one on each side of the onion in the pot.

9

Fill the pot with enough water to just cover the onion, ensuring it barely floats.

10

Trim the bottom of the artichoke to create a flat base and use kitchen shears to trim off the prickly tips of the leaves.

11

Bring the pot to high heat and add about 1 tablespoon of salt to the water for steaming.

12

Once boiling, reduce the heat to a simmer and place the artichoke on top of the onion in the pot, then cover with a lid.
