Wash the apples one by one.

Peel the apples and fill three large pots with apple quarters.

In the first pot, add a large cap of vanilla extract.

In the second pot, add a good amount of cinnamon.

In the last pot, add a packet of pitted prunes.

Add two tablespoons of water to each pot to start the cooking process.

Cook on low heat for about 40 minutes, stirring occasionally to prevent sticking.

Once the apples are cooked, mash them roughly or blend them for a smoother texture.

Fill the jars with the hot compote, ensuring the rims are clean and dry.

Leave a space of at least 2 cm between the compote and the lid of the jar.

Place two reusable metal clips on each jar.

Sterilize the jars in a sterilizer at 100 degrees Celsius for at least 40 minutes (80 minutes used in the video).

Remove the jars from the water immediately after sterilization to prevent moisture at the seals.

Check that the seals are successful by ensuring the tab on the jar lid is pulled down when cool.
