Coconut oil adds flavor while being dairy-free.
Peel the apples to remove the skin.
Cut each apple into small pieces.
Add the chopped apples to a saucepan.
Add water and lemon juice to the saucepan.
Add vanilla seeds directly from the vanilla pods to the saucepan.
Add sugar to the pan and mix a little before heating.
Place the pan on medium to high heat and allow to boil for about 15 minutes.
Add vanilla pods to extract maximum flavor.
Cover the pan and check occasionally, stirring to ensure the apples are not too hard and are becoming more like a compote.
Remove the compote from heat and allow to cool.
Melt butter in a separate pan.
Add almonds, breadcrumbs, and sugar to the melted butter and mix well.
Toast the mixture in the pan for about 5 to 10 minutes until golden, depending on heat.
Add a little salt to the breadcrumb mixture.
Whip some liquid crème fraîche for serving.
Serve the dessert in individual glasses by layering compote, breadcrumb mixture, more applesauce, whipped cream, and another layer of breadcrumbs.
