Risengrød, a traditional Danish rice porridge, has roots in the Nordic countries, often enjoyed during winter months and festive occasions. It's a comforting dish that evokes nostalgia and warmth, typically served with cinnamon and sugar, sometimes even a hidden almond for good luck. Today, it remains a staple in Danish households, especially during Christmas, showcasing the simplicity and heartiness of Scandinavian cuisine.

Almond milk is lower in calories, while powdered milk is cost-effective.

Coconut oil offers a healthier fat option, and margarine is often cheaper.
Mix brown sugar with cinnamon in a bowl and stir well to combine. Set aside as this will be used to top the pudding later.
Add rice and water to a pot over high heat. Boil for 2 mins and then add all the milk at once.
Add a bit of salt, stir and reduce the heat to medium.
Cook the pudding for 35 mins stirring frequently to make sure that no rice burns at the bottom.
After 35 mins the rice should look like a porridge and be fully cooked so you can take it off the heat.
Divide into two serving bowls immediately and sprinkle generously with the cinnamon sugar topping.
Add a cube of butter on top and let it melt before eating.
