Preheat the oven to 180°C (convection).
In a mixing bowl, cream together butter, brown sugar, and sugar until light and fluffy.
Add the egg and mix well.
In a separate bowl, combine flour, ammonium carbonate (or baking powder), and cinnamon.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them apart.
Flatten each cookie slightly with the back of a fork or your fingers.
In a small bowl, mix the additional egg with milk and brush the mixture on top of the cookies.
Sprinkle with sugar before baking.
Bake in the preheated oven for about 7-8 minutes, or until the edges are lightly golden.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
