Mix 8 ounces of mascarpone, 2 tablespoons of sugar, and 1 teaspoon of vanilla until combined.
Chill the mascarpone mixture until ready to fill the pastry.
Remove the pits from 20 cherries using a wet paper towel for your hands.
Slice and chop 1 granny smith apple.
In a pot, combine the chopped apple, 1/2 cup sugar, and 1/4 cup cornflour to thicken the filling.
Add a handful of cranberries to the pot.
Bring the mixture to a boil over medium heat and cook until the apples are soft, then let it cool.
Preheat the oven to 400°F (200°C).
Roll out a sheet of puff pastry and cut it into squares, keeping the pastry moistened with paper towels.
Fold each square into a triangle, making cuts on both sides without connecting them.
Fold over the cut sides to create a kite shape.
Add a spoonful of the chilled mascarpone mixture and top with a spoonful of the fruit compote.
Brush the pastries with an egg wash.
Bake in the preheated oven at 400°F (200°C) for 15-20 minutes.
