Use large XL food-grade bags to proof the Danish.
Fill a Pyrex measuring cup or large coffee mug 3/4 of the way with boiling water to create warmth and steam.
Place the mug in the bag to keep it from touching the dough, then zip the bag shut.
Check the dough after 30 minutes of proofing.
Observe the dough at different stages of proofing: tight, slightly puffy, and fully proofed.
If the dough hasn't risen after 30 minutes, refresh the boiling water and give it another 15-20 minutes.
Egg wash the proofed Danish before baking.
