Today, Danish pastries have gained international popularity, appearing in bakeries around the world, often with creative fillings and toppings.

In a large bowl, mix 475 grams of all-purpose flour, 65 grams of granulated sugar, and 2 grams of kosher salt.
Add 6 grams of instant yeast and 2 grams of dry malt diastatic powder to the mixture and mix with a whisk or by hand.
Incorporate 25 grams of room temperature unsalted butter into the flour mixture using fingers to break it into small pieces.
Make a well in the center of the mixture and add 240 grams of room temperature tap water and 30 grams of cream.
Mix the wet and dry ingredients together using a plastic scraper or spatula until moistened, then knead slightly with hands to ensure all flour is incorporated.
Cover the bowl with plastic wrap and let the dough sit at room temperature (75-78°F or 24-26°C) for 1 hour to develop flavor.
Lightly flour a baking sheet and your work surface, then roll the dough into a 14x10 inch rectangle.
Cover the rolled dough with plastic wrap and refrigerate for 6-8 hours or overnight to relax the gluten.
Prepare the butter by cutting 225 grams of unsalted butter into six large pieces and placing them on a piece of parchment paper.
Using a ruler, draw a rectangle on the parchment paper measuring 10 inches by 7 inches and place the butter inside, then soften the butter slightly.
