Mix flour, sugar, and salt in a large bowl.
Dissolve yeast in warm milk and let sit until frothy, about 5 minutes.
Add yeast mixture, eggs, and vanilla extract to the flour mixture; stir until combined.
Knead dough on a floured surface until smooth, about 5-7 minutes.
Wrap dough in plastic wrap and refrigerate for at least 2 hours.
Roll out chilled dough into a rectangle on a floured surface.
Spread softened butter evenly over two-thirds of the dough.
Fold the unbuttered third over the middle, then fold the other third over that, creating a layered effect.
Wrap in plastic and refrigerate for another 30 minutes.
Roll out dough again and repeat the folding process two more times.
Cut dough into squares or triangles, and place a dollop of cream cheese and fruit preserves in the center.
Fold the corners towards the center and pinch to seal.
Place pastries on a baking sheet lined with parchment paper.
Let rise for 30 minutes until puffy.
Preheat oven to 375°F (190°C).
Bake pastries until golden brown, about 15-20 minutes.
Cool slightly, then drizzle with a mixture of powdered sugar and lemon juice.
