Jødekager, or Jewish Cookies, are a beloved treat in Denmark, often enjoyed during festive occasions and holidays. Traditionally made with simple ingredients, these cookies reflect the Danish penchant for baked goods that are both sweet and satisfying. Over time, variations have emerged, with different nuts and flavorings, making them a versatile favorite that transcends cultural boundaries.

Walnuts provide healthy fats, while sunflower seeds are a budget-friendly alternative.
Add 4 cups of flour to a mixing bowl.
Add 1.5 cups of sugar to the flour.
Add 0.5 teaspoons of ginger to the mixture.
Grate the zest of 1 lemon into the bowl.
Add 15 tablespoons of ice cold butter to the mixture.
Mix the ingredients together, either by hand or with a mixer, until combined.
Add 2 egg yolks to the mixture and combine well.
Form the dough into a roll and squeeze it together until it sticks.
Wrap the dough in plastic wrap and refrigerate for about 2 hours, or freeze for 30 minutes to 1 hour.
Roll out the chilled dough on a floured surface and cut out cookies using a glass.
Prepare a baking sheet by greasing it with butter and dusting with flour (or using parchment paper).
Place the cut cookies on the prepared baking sheet.
Beat 1 egg and brush it over the cookies.
Sprinkle cinnamon sugar on top of the cookies.
Add chopped almonds on top of the cookies.
Preheat the oven to 400°F (200°C).
Bake the cookies for about 6 to 8 minutes until golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
