Rhubarb Compote

4 cups rhubarb, chopped
1 cup granulated sugar
1/2 cup water
to taste amaretti cookies
to taste whipped cream

Chop the rhubarb into pieces and add it to a pot.

Add a little more than a quarter of a cup of sugar to the pot with the rhubarb.

Add a splash of water to the pot to prevent the rhubarb from burning.

Stir the mixture well to combine the ingredients.

Bring the mixture to a boil, then reduce the heat and cover the pot to let it simmer.

Stir occasionally to prevent sticking and check the consistency.

Simmer until the rhubarb is completely tender and has broken down into a goopy mass.

Taste the compote to check the sweetness and add more sugar if needed, stirring until dissolved.

Transfer the hot compote to a container and place it in the fridge to chill.

To serve, use the compote over yogurt or ice cream, or make a rhubarb fool parfait with layers of compote, crushed amaretti cookies, and whipped cream.
