Rhubarb Compote

4 cups rhubarb, chopped
1/2 cup water
1 vanilla pod
2 cups oats
1 cup milk
1 cup granulated sugar
1 cup strawberries, sliced

Pick rhubarb from the garden, pulling it straight from the root.

Remove the tops of the rhubarb and bring the stems into the kitchen.

Cut off the dirty ends of the rhubarb stems.

Chop the rhubarb into small pieces.

Add a tiny bit of water to the chopped rhubarb in a pot.

Slice open the vanilla pod and scrape out the seeds, adding them to the rhubarb.

Add the vanilla pod to the pot with the rhubarb.

Cook the rhubarb until it softens, checking the consistency.

Measure out 3 cups of oats and 6 cups of milk for oatmeal.

Add the oats and milk to a pot and bring to a boil.

While the oatmeal cooks, check the rhubarb compote and add more water if it's too thick.

Add chopped strawberries to the rhubarb compote for color and flavor.

Once both the oatmeal and rhubarb compote are ready, add sugar to the compote to taste and stir until combined.
