1 cup rice
4 cups milk
1 cup sugar
1/4 cup grated coconut
1/4 tsp cardamom powder
1/4 cup cashews
1/4 cup raisins
2 tbsp ghee
1/2 tsp salt

Wash the rice thoroughly and soak it in water for about 30 minutes.

In a heavy-bottomed pan, heat the ghee over medium heat.

Add the cashews and raisins to the ghee and fry until the cashews are golden brown and the raisins are plump. Remove and set aside.

In the same pan, add the soaked rice and sauté for a few minutes until it becomes slightly translucent.

Pour in the milk and bring it to a boil, stirring occasionally to prevent sticking.

Once it reaches a boil, reduce the heat to low and let it simmer until the rice is cooked and soft, about 20-25 minutes.

Add the sugar, grated coconut, and salt to the mixture, stirring well until the sugar dissolves completely.

Sprinkle the cardamom powder and mix well.

Finally, add the fried cashews and raisins back into the payasam and stir gently.

Serve warm or chilled, as per your preference.
