Heat a large pot or dutch oven and add 1 tablespoon of oil.
Add 1 pound of ground beef and break it up as it browns.
Season the ground beef with 2 teaspoons of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of cumin.
Once browned, add 1 large chopped onion and 3 minced garlic cloves; sauté until the onion is translucent.
Add 1 diced carrot, 1 cubed potato, and 1 can of diced tomatoes (or chop up 2 fresh tomatoes).
Pour in 4 cups of beef broth and stir everything together.
Close the lid and cook until the vegetables start to soften.
Add 1 can of tomato puree and 1 pound of short pasta, along with 3 cups of hot water; stir to combine.
Close the lid again and cook until the pasta softens, about 9 to 13 minutes, until most of the liquid is absorbed.
Open the lid, stir everything together, and top with chopped fresh herbs before serving.
