Cut whale meat into large pieces.
Brown the whale meat in a hot pan with a little neutral oil.
While the meat is browning, chop some bacon.
Add the bacon to the pan with the meat; do not cook it fully, just until it has a nice crust.
Transfer the browned meat and bacon to a baking dish.
Season the meat with freshly ground black pepper and salt.
Do not wash the pan; use it for the next step to retain flavor.
Sauté chopped vegetables (onions, carrots, celery) in the same pan with more oil until they are golden and fragrant.
Add thyme and rosemary to the vegetables while sautéing.
Transfer the sautéed vegetables over the meat in the baking dish.
In the hot pan, add halved cherry tomatoes, drizzle with oil, and sprinkle a pinch of sugar; sauté for about a minute until they have a natural sweetness.
Add the sautéed tomatoes to the baking dish.
Finish the dish with a splash of red wine and a couple of tablespoons of flour to thicken the sauce, mixing well before pouring it over the meat.
Pour in some beef broth to complete the mixture.
Cover the dish and place it in the oven at 175 degrees Celsius for about one hour.
