Preheat the oven to 350 degrees Fahrenheit.

Heat 1/3 cup of Greek extra virgin olive oil in a heavy pot.

Brown the lamb in the oil until caramelized.

Season the lamb with salt and pepper while browning.

Peel and slice 1 onion; add it to the pot after browning the lamb.

Prepare 2 carrots and 2 stalks of celery by slicing them and add them to the pot.

Slice 4 cloves of garlic and add them to the pot.

Add 2 cups of soaked chickpeas to the pot without pre-cooking them.

Add 2 bay leaves, 1 teaspoon of ground cinnamon, and a little more salt and pepper to the pot.

Add chopped parsley, dill, and mint to the pot.

Pour in a 660 mL jar of passata and half a jar of water to the pot, mixing everything together.

Add 1 teaspoon of dried oregano to the mixture.

Cover the pot and place it in the preheated oven for 2 hours.

After 2 hours, remove the pot from the oven and check the stew.
