Start with 5 lbs of beef from the butcher, leaving the skin on.
Place the beef into a large pot.
Prepare the vegetables: chop 2 large tomatoes, 1 red bell pepper, 2 onions, and 2 carrots into pieces.
Add ginger and 3 cloves of garlic to the pot.
Add 2 ainaro peppers and garden egg eggplants to the pot.
Season the meat with about a teaspoon of black pepper and salt.
Add a little bit of water to help blend the ingredients.
Cover and blend the tomatoes and other ingredients until smooth.
Pour the blended mixture into the pot with the beef and vegetables.
Add about 2 more cups of water to ensure the meat is covered.
Bring the pot to a boil, then let it simmer for about 25 minutes.
Check the soup for seasoning and add more salt if needed.
Stir the soup to prevent the meat from sticking to the bottom of the pot.
After 25 minutes, check the soup; it should be well-cooked and flavorful.
Turn off the flame when the soup is ready.
