Crack 2 eggs into a bowl and whisk until frothy.
Heat a pan and add 30 grams of butter and some olive oil.
Chop 1 onion and add it to the pan, cooking until soft and golden.
Grate 3 medium-sized potatoes and squeeze out the water.
Add the grated potatoes to the pan with the onions and mix well.
Grate 1 carrot and add it to the pan, stirring to combine.
Chop 1 bell pepper into small pieces and add it to the pan.
Mince 2 cloves of garlic and add to the pan, cooking for a minute or two.
Sprinkle in 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of oregano, cooking until everything is tender and golden.
Remove the pan from heat and transfer the mixture to a bowl.
Add the whisked eggs to the veggie mixture and mix well.
Chop a small bunch of parsley and toss it into the mixture.
Grate 300 grams of soft cheese and add half to the mixture, saving the rest for later.
Add 150 grams of ricotta cheese to the mixture and mix until fully incorporated.
Grease a muffin tin with butter and form potato baskets in each cup.
Bake the potato baskets in the oven at 180°C for about 20 minutes until golden and crispy.
In a pan, add olive oil and 220 grams of ground beef, breaking it up as it cooks.
Chop 1 tomato and add it to the pan with the beef.
Add 1 teaspoon of tomato paste, 1 teaspoon of salt, and 1 teaspoon of black pepper, cooking until the beef is fully cooked through.
Remove the potato baskets from the oven and spoon the beef mixture into each one.
Top with the remaining potato mixture and sprinkle the rest of the cheese on top.
Return the muffin tin to the oven and bake for another 15 minutes at 180°C.
Prepare a sauce by mixing 3 tablespoons of sour cream, 1 tablespoon of mayonnaise, 1 tablespoon of tomato paste, 1 teaspoon of mustard, 1 grated garlic clove, chopped parsley, 1 teaspoon of salt, and half a teaspoon of black pepper until smooth.
Plate the potato baskets with the sauce on the side.
