  • 1 cup basmati rice
  • 1/2 cup chana dal (split chickpeas)
  • 1/2 cup mixed vegetables (carrots, peas, beans)
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 2 tbsp mustard oil
  • 1/2 tsp salt
  • 1/2 tsp red chili powder
  • 1/2 cup yogurt
  • 1/4 cup pickles (mango or lime)
  • 1/4 cup papad (crispy lentil wafers)
  • 1/4 cup fish curry (optional)
  • 1/4 cup aloo bhorta (mashed spiced potatoes)

Instructions

  1. 1Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes.
  2. 2In a pot, bring 2 cups of water to a boil, add the soaked rice, and cook until tender. Drain and set aside.
  3. 3In a separate pot, heat mustard oil over medium heat. Add cumin seeds and let them splutter.
  4. 4Add chana dal and mixed vegetables to the pot, followed by turmeric powder, salt, and red chili powder. Stir well and cook for about 10 minutes until the dal is soft.
  5. 5In a bowl, mix yogurt with a pinch of salt and a sprinkle of red chili powder for flavor.
  6. 6Prepare the aloo bhorta by boiling potatoes, mashing them, and mixing with mustard oil, salt, and chopped green chilies.
  7. 7If using fish curry, prepare it separately by cooking fish in a spiced gravy until done.
  8. 8To serve, place a portion of rice, dal, mixed vegetables, yogurt, pickles, papad, and aloo bhorta on a thali (platter).
  9. 9If using, add a portion of fish curry to the thali.
  10. 10Garnish with fresh coriander leaves and serve hot.
